oven puke

Note to self: my killer meatloaf recipe does not play well with ground un-meat for vegetarians. Although I gave it a good shot, it was pretty gross. I mean, it tasted okay, but it looked like the oven puked into a casserole dish. And I need to go easy on the milk part of the mashed sweet potatoes. Just say no to baby food.

Thankfully, the chocolate chip cookies made up for dinner’s shortcomings.

I think I’ll make Monday nights my official Try Not To Kill The Vegetarian Flatmate With My Cooking Experiments nights. Do you have any good recipe suggestions for next week? I’m focusing on ingredients I can purchase at the farmer’s market.

    Ew. Oven puke. Oh, I’ve been there… Every once in a while my experiments go awry. I tried to make a tart last night, and it reminded me I don’t have the patience for baking.

    Against my better judgement (I’m a little shy with my cooking) I’m going to provide a bit of a recipe that I fumbled around with Sunday night. I had gotten some produce straight out of my Grampaw’s garden, and threw it all together in a pot. You (and your roommate) might like this: it’s vegetarian and kind of italian-tasting. It’s loosely based on my Michigan mother-in-law’s tomatoes and dumplings, but I had to screw around with it a bit, and spice it up.

    _Tomatoes and Dumplings, the extended dance mix_

    Add the following to a large saucepan or small stock pot with EVOO, on med-hi heat, in the order listed…
    .Onions (1 small-med, sweet if available)
    .Garlic (1 clove)
    .Zucchini (1)
    .Tomatoes – very ripe (I think I used 5 or 6!)
    .S & P to taste
    Let that stew for a few minutes, then add…
    .Fresh Basil
    .Bisquick (1 dumpling recipe)

    Once you add the dumplings, cover and cook for 10 minutes, lowering the heat slightly. It makes kind of a summer stew with dumpling/biscuit topping.

    When using run of the mill veggie un-meats for loaf-like dishes, be sure to add plenty of bread crumbs.

    It’s not farmer’s market, but i highly recommend checking out your local Trader Joe’s. They have awesome meatless meatballs in the freezer section along with veggie gyoza (and i’ve recently seen veggie chicken gyoza!). Plus they have awesome heat and eat stuff like veggie medleys and yummy gnoccis and raviolis, etc…

    From my previous life as a vegetarian’s spouse, I’ve got tons o’tasty recipes. I’ll get my favorites over to you when I’m home.

    Meantime, the best soy meat is “Smart Ground” — you can use it in various things, like vegetarian chili, as you would chop meat since it’s already “crumbled.”
