I caught my first Scottish cold! Which really isn’t that great of an accomplishment at all, especially when it happened right as FunkyPlaid and I left for our weekend away with friends in Glencoe. On the way there, we stopped for gluten-free fish and chips. I’ll let that sink in a moment. Gluten-free fish and chips. And they were good. (Stop by the Real Food Café in Tyndrum! Due to an international banking error — those are fun, let me tell you — we do not have a car yet. FunkyPlaid wanted to show Mike around outside the city, so he rented a car and the three of us sped off to St Andrews. I hate being the little old lady in the front seat, clutching her purse, but there I was, incredibly nerve-wracked by the seemingly arbitrary rules of the road. I loosened up a bit with the M90‘s standard highway-ness. Still, it is embarrassing and disappointing to be so thrown by UK driving. These “firsts” will dwindle after a while, I promise. Tonight I riffed a bit on this warm quinoa salad recipe. It was my first home-cooked meal in the new flat — and my first ever with a convection oven — so I was a bit skeptical about what I could do without any of my usual utensils and pans. Despite my concern, it was delicious. We did not find quinoa at the market, so I substituted risotto, and I added fresh prawns from the fishmonger’s to turn it into a dinner salad for three. One whole year of marriage already? How can this be possible? You’d think we had spent the last twelve months planning a transcontinental move or something. Post-move, time seems to be slowing down a bit, which I appreciate because I want to savor each moment with my husband. (Will referring to FunkyPlaid as “my husband” ever get less thrilling to type?) Ah, vacation, I thought, and then: why are the cats here? When making an appointment for next week, I was startled by the emptiness of my calendar.
