Avoid, embrace meal planning.

As mentioned in my previous post, I am attempting to exhaustion-proof my kitchen by planning meals out in advance and stocking up on healthy snacks and lunches. I have been resistant to meal-planning because I avoid creating additional structure around my diet so I can act like I still have a little freedom despite the gluten-free stuff. One more week.

The winter semester starts next Monday, as does my new job, so I have one more week to power through my to-do list before the big items hit. These items are very exciting, I assure you, the kind of exciting that I have been putting off for months. Yet I persist. I am also trying some new recipes so that I will have more momentum to cook dinner regularly. Tonight I made another salmon dish, although I still have yet to find that perfect salmon cooking temperature and time. I made balsamic maple glaze from this recipe, and I liked the taste a lot. I take absolutely no credit for any part of their deliciousness; I merely looked for recipes that sounded good, and then followed their instructions. Pork chops with bacon-sage sauce: bacon, sage, and shallots are wonderful things. Creamed leeks: because I wanted to do something awesome with our lovely CSA leeks. Angsomnia: when, due to angst, one cannot sleep. I should have had a perfectly lovely evening. Before that, I should have had a perfectly lovely day. All of my problems were no more than minor irritations in actuality, logistical tangles to untie quickly and cleanly. Why, then, do I only fumble them? I should stop not-bringing my camera to places; last night’s dinner, homemade by friends in Alameda, was so good that it should have been documented.  I was too busy stuffing my face on duck confit. Tea is steeping in a mug that was obviously handmade by a child somewhere along the timeline. I do not remember making this mug, but I remember someone telling me in my twenties that I had made this mug, and I believed it.  For all I know, this could be a secret agent mug, lying in wait in my cupboard all these years, only to be activated when the proper mixture of tea, milk, and sugar is applied. Once I overheard someone talking about eating great fruit, with the accent on “great”. I realized a few sentences in that he said “grapefruit” but it never tasted like grapes to me, so greatfruit it is. Today’s surprise treat from a coworker is a greatfruit and prawn salad with peanuts, almonds, onions, dried baby shrimp, Vietnamese mint, and cassava chips on the side. It is sweet, tangy, spicy, and every bit as delicious as it sounds.  I am once again indebted to this very good cook who knows so many gluten-free dishes.
