Food has become so problematic for me that sometimes I have difficulty getting enthused about cooking. I decided to jumpstart this with some homemade pizzas. I experimented a little with the crust, using 250 grams of Doves Farm gluten-free plain white flour with a little over a teaspoon of xanthan gum for texture, and I was pleased with the results. I also caramelised some onions to put on top, extra for mine since I’m avoiding tomato sauce at the moment. Add feta and prosciutto: delicious.
