Shortly after arriving in Edinburgh last year, I was scrambling for dinner recipes. In the end, I took a perfectly gorgeous salad recipe — spinach, orange, chickpeas, roasted beets — and to pacify the quinoa-averse I added risotto instead. And prawns.
One might ask where it went wrong. It was so pure, so healthy, so vegan. Somewhere along the line, it got mixed up with the wrong crowd and resulted in this decadence.
FunkyPlaid really likes it, so when I have the time to spend on roasting the beets and making the risotto, I enjoy making it for us. And I only feel a little guilty.
