When my alarm goes off at 5:30 a.m. I have a hard time remembering what my name is, let alone figuring out how to prepare a moderately healthy breakfast. Oatmeal does the trick, sort of, but after several days in a row of oatmeal I get the urge to mix things up.
Tonight I made this recipe, only I used turkey instead of ham (due to personal preference) and vegan “mozzarella” (because no matter how much I love dairy, it will never love me back). FunkyPlaid and I tried a bit of the final product, and it is quite tasty. It’ll keep in the fridge all week, so now all I have to do is cut a slice, reheat it in the microwave, and nom.
I attempted two other new-to-me recipes for dinner tonight as well, but they didn’t turn out quite as good. Ah, well. We’ll always have breakfast …
